Brussels Sprout, Carrot and Radish Salad

If you’re looking for an alternative, refreshing salad option beyond lettuce, tomatoes and cucumber, then this salad may just be for you.

Ideal to prepare the day before to take with you to work, it has loads of different veggies and no added sugar. If you keep the dressing separate then the chopped veggies will last a good few days, so its a great meal prep option for the week. It’s ideal to serve with any white meat or fish; here I’ve used Quorn fillets as a vegetarian option.

Recipe for Brussels Sprout, Carrot and Radish Salad with Fajita Quorn Fillets

Serves 3; 0 Second Nature Carbs; Prep time – 30 mins, Cooking time – 6 mins

Ingredients

  • 4 tbsp toasted sesame oil
  • 4cm piece fresh ginger, very finely chopped
  • 1 lemon, juiced
  • 1 tbsp dark soy sauce
  • 350g Brussels sprouts
  • 230g carrots, grated
  • 180g radishes, sliced
  • 4 spring onions, sliced
  • 20g coriander, remove stalks and roughly chop
  • 1tbsp extra virgin olive oil
  • 4 Quorn fillets
  • 1tsp fajita seasoning
  • 4 tbsp of cream cheese
  • Optional to serve: sprinkle of basil seeds, black sesame seeds and toasted coconut flakes
  1. Make the dressing first by mixing the sesame oil, ginger, lemon juice and soy sauce in a small bowl. Leave to one side.
  2. Heat the olive oil in a small frying pan and sprinkle the fajita seasoning over the Quorn fillets.
  3. Cook the fillets for approximately 3 minutes each side, turning more regularly if needed to prevent the seasoning burning.
  4. Meanwhile mix together the sprouts, carrots, radishes, spring onion and coriander in a large bowl,
  5. Drizzle over the dressing and mix well.
  6. Serve each portion with a Quorn fillet, 1 tbsp cream cheese and finely sprinkle over the basil and sesame seeds and coconut. Voila

We both really liked this salad. You could also use cabbage instead of the sprouts if they aren’t your thing. The only bit I didn’t like was the amount of time spent chopping the veg; sprouts in particular! This is a recipe I’ll be adding to the regular meal plan calendar! I’ll likely vary the ‘meat’ (my husband had a piece of battered fish) and it could even have a few toasted nuts or seeds added in for a bit more protein. Cashews, peanuts and/or sunflower seeds would be good options I reckon.
